Living in oversea is difficult to fine some Thai ingredients. For example, young green papaya is one of the rare ingredient to find, so using fresh fruits is very interesting idea for Som Tam Phon La Mai.  All you have to do is just follow the procedure laid out in my post on Thai Green Papaya Salad. It is very easy and delicious.

1 clove garlic

1 tablespoon dried shrimp, rinsed and patted dried

1 tablespoon palm sugar

1 ½ tablespoons fresh squeeze lime juice (preferably Key limes)

1 tablespoon fish sauce

1 ½ cups fresh fruits such apple, pear, melon, pineapple, grape, dragon fruit, or any inedible skin peeled fruits, cut into bite-size pieces

4 cherry tomatoes, halved

2 tablespoons coarsely chopped unsalted roasted peanuts

Methods:

  1. Use mortar and pestle to crush chilies and garlic,
  2. Add palm sugar, fish sauce, cherry tomatoes, and lime juice, continue pounding with pestle until the dressing well mixed.
  3. In a large bowl, add fruits and pour the dressing on, then gently combine all ingredients together until well mixed.
  4. Transfer to a serving plate, garnish with dried shrimp and roasted peanuts.

Serves immediately.
